Located in the Aveyron region of France, Le Manoir Alexandre is an authentic establishment devoted to the production of typical dishes from the Southwest of France such as Cassoulet, magrets, pâtés, sausages and duck Foie gras (fat livers) of the best quality.

Foie gras, enjoyed by the Egyptians during the third millenium BC (before Christ), has become in the 19th Century one of the strongest elements of the French gastronomical patrimony, enjoyed for its unrivalled sweet taste. It is mainly produced in the great Southwest of France.

Foie gras is a very delicate product. Its preparation and its designation are strictly regulated. At our site of Espalion, the strictest rules of origin, quality and hygiene are adhered to. Livers of mallard ducks are provided by six producers who keep rigorous records of the source of each liver and the strict hygiene standards are adhered to. This results in the high quality taste and flavour of the foie gras.
